Christmas future with mangoes

Is it a pain for most people to come up with inspiring ideas for starters, main courses and what to do with the masses of left-over turkey that Christmas brings? I think we have the magic ingredient in It's So Mango! to bring out something different this coming Christmas. Why not try the taste of mango marinated turkey, a light dessert with mangoes, vanilla icecream, and chopped almonds and pistachios?

Here's a taste of how easy and delicious this Christmas can be with a dead simple recipe for curry using leftover turkey meat:

INGREDIENTS

·         5 tbsp vegetable oil
·         1 onion finely chopped
·         4 cloves garlic finely chopped
·         3 tbsp It's So Mango pulp 
·          1 tsp ground cumin
·         1 tsp ground coriander  
·         ½ tsp tumeric 
·         ¼ tsp chili powder 
·         ¼ tsp garam masala 
·         ¼ tsp salt 
·         500 g roast turkey, cut into small pieces
·         1 tsp lemon juice
·          1 small bunch coriander, chopped

METHOD

1. Heat 4 tablespoons of the oil in a saucepan and add the onion and garlic. Fry using a low to medium heat until the onion is lightly browned.
2. Add It's So Mango, the remaining oil, cumin, coriander, turmeric, chilli powder, garam masala and salt to the onion mixture and fry for a couple of miutes

3. Stir in the turkey pieces and cook for two minutes.
4. Add 400ml of hot water from the kettle and simmer for 3-4 minutes. Add the lemon juice.
5. Garnish with coriander and serve with plain basmati rice, bread and raita.
