Christmas future with mangoes

Is it a pain for most people to come up with inspiring ideas for starters, main courses and what to do with the masses of left-over turkey that Christmas brings? I think we have the magic ingredient in It's So Mango! to bring out something different this coming Christmas. Why not try the taste of mango marinated turkey, a light dessert with mangoes, vanilla icecream, and chopped almonds and pistachios?

Here's a taste of how easy and delicious this Christmas can be with a dead simple recipe for curry using leftover turkey meat:

INGREDIENTS

·         5 tbsp vegetable oil
·         1 onion finely chopped
·         4 cloves garlic finely chopped
·         3 tbsp It's So Mango pulp
·          1 tsp ground cumin
·         1 tsp ground coriander
·         ½ tsp tumeric
·         ¼ tsp chili powder
·         ¼ tsp garam masala
·         ¼ tsp salt
·         500 g roast turkey, cut into small pieces
·         1 tsp lemon juice
·          1 small bunch coriander, chopped

METHOD

1. Heat 4 tablespoons of the oil in a saucepan and add the onion and garlic. Fry using a low to medium heat until the onion is lightly browned.
2. Add It's So Mango, the remaining oil, cumin, coriander, turmeric, chilli powder, garam masala and salt to the onion mixture and fry for a couple of miutes

3. Stir in the turkey pieces and cook for two minutes.
4. Add 400ml of hot water from the kettle and simmer for 3-4 minutes. Add the lemon juice.
5. Garnish with coriander and serve with plain basmati rice, bread and raita.

Recipe for success

Having a simple, brilliant recipe for mango pulp bore fruit for Wendy Graham from Gateshead. Wendy came up with a delightful dessert recipe to win a luxury break at a Club La Costa resort. Have you got any recipe ideas for mango pulp?

The winning recipe for the It's So... holiday competition  Wendy's own words:
Mix your It’s So Mango with natural yogurt, lighly whipped cream, grated fresh ginger and ground cardomon - spoon into glasses and chill then before serving sprinkle over some more It’s So Mango and lightly crushed pistashios. Mmmmm - I usually serve after an indian or even Thai dinner and it goes well as a 'sauce' with any drizzle cake. However when I do it I always make too much, so I have some for breakfast too!

Food for thought - getting in front of food buyers

How do you get a new food product in front of hard-to-reach buyers? The guardian's of our taste-buds are an elite group working for national and international multiple, major and minor retailers who can decide if a new product launch stands or falls when it is listed, or not, and just how many retail outlets it is going to be listed in? How do you grab their attention? At food shows and exhibitions where you know they will attend, mailing them with samples, through PR so they can read about your new product in the trade and consumer media? Or it it just being in the right place at the the right time?

I have a feeling it's a combination of the above and perhaps, if you have them, knowing who the right contacts for your particular product are.

Any views and suggestions on this topic would be most welcome!!

Beautiful food that's sooooo good for you!

There are few foods that have the aesthetic and health appeal of fresh mangoes. Plenty of potassium to help lower blood pressure, fibre, antioxidants and a host of vitamins to boost the immune system, and all this from a fruit with vibrant colour, exotic scent and the sweetest taste. Does any other fruit spring to mind? The problem has been getting it all-year-round in quantaties and quality to use for catering and home kitchen recipes. That's not a problem now thanks to It's So Mango http://www.itssonatural.co.uk/side-menu/so-healthy

Fruitless battle with your kids?

Tempting children to eat fresh fruit can be a ‘fruitless’ battle given the temptations of sweets and processed foods. Most parents tear their hair out at some point desperate to get their little ones to taste, and then eat, fresh fruit.
You can try all sorts of ways of getting fresh fruit into their mealtimes and lunch boxes. You can add it to puddings and ice cream, freeze it to give it a different texture, or try a fruit like mango that already has a winning flavour and texture with kids. How do you get your kids to eat fresh fruit?
Is the challenge for you also about getting your hands on fruit like mangoes, spending time peeling, stoning and chopping? Have a look at www.itssonatural.co.uk and there is a dream solution.
